Unsweetened chocolate melts into butter and sugar for intensely fudgy brownies that bake in just 18 minutes at high heat.

READY

Melt chocolate and butter in a double boiler until smooth, then beat in sugar and eggs until the batter turns glossy.

The high oven temperature creates crispy edges while keeping the centers gooey.

These brownies bake fast and furious, so watch them closely starting at 15 minutes to catch them at peak fudginess.

Chef Tips

  • Use a double boiler to prevent scorching the chocolate and creating grainy texture
  • Well-butter the pans so the brownies release easily despite the short bake time
  • Test with a toothpick; a few moist crumbs clinging means they’re done
  • Cool in the pan for easier cutting and to let the centers set properly
