| 1 | cup | flour, all-purpose | |
| 1/4 | cup | sugar | |
| 2 | teaspoons | baking powder | |
| 1 | teaspoon | salt | |
| 1/4 | teaspoon | nutmeg | ground |
| 1 | each | egg | beaten |
| 1/2 | cup | milk | |
| 1 | tablespoon | vegetable oil | |
| 1 | teaspoon | vanilla extract | |
| 3 | each | bananas | cut into 1 inch pieces |
| 1 | x | fudge sauce |
In bowl stir together flour, sugar, baking powder, salt and nutmeg.
Combine egg, milk, 1 tablespoon oil and vanilla; stir into dry ingredients until smooth.
In wok heat 2 inches oil to 375 degrees F.
Dip banana pieces into batter; fry a few at a time in hot oil for 2 to 3 minutes or until golden.
Drain on paper toweling.
Serve with hot fudge sauce or maple syrup or sprinkle with powdered sugar.

Turned out very good. I was worried how they would turn out considering that there was absolutely no butter or oil in the recipe at all! They didn't rise as much as more traditional recipes but turned out great with a lovely rustic home-made appearance. Not too sweet, lots of chunks of apple and cranberries, bursts of sweet vs. sour. The texture was slightly like a sponge cake. I would recommend filling the muffin cup from 2/3 up to full.
