35 minThis recipe gives you options, and on a busy weeknight, options are everything.
Swap in asparagus or spinach depending on what’s in the pantry, layer it up with julienned ham and shredded mozzarella, and blanket the whole thing in a simple garlic-and-thyme white sauce.
The microwave does the final cooking in about 10 minutes, which means you’re sitting down to eat while the kitchen is still clean.
Five lasagna noodles, cut in half and layered three times, give you just enough pasta without drowning out the vegetables.
Kitchen Tips
- If using spinach, squeeze it dry in a clean towel first; waterlogged spinach will make the sauce thin
- Rotate the dish twice during microwaving so every layer cooks evenly
- For a crispier top, pop it under the broiler for 2 minutes after microwaving
