Easy and tasty. Serve it with some delicious summer BBQ, arrange the salad over a bed of fresh greens to get some veggie boost.
This creamy and flavorful new potato salad is a great side dish with any summer BBQs.
This Pasta Salad with Cucumber, Tomato, and Feta was not something I had planned on blogging about. It merely came about because I had nothing to cook for dinner, save a package of gluten-free pasta I had picked up for emergencies and a variety of veggies from my CSA. Then my husband loved it so much that he had two helpings, and he insisted that I write about it. I’m trying to move my family towards a more grain-free existence, but sometimes I just don’t have it in me to think gourmet. Sometimes, we do the best that we can. All this is my way of saying that the amounts of ingredients here are really just approximations. I have no idea what exactly I put in here to make it taste so yummy. You’ll have to channel your inner Italian grandma, and just mix in ingredients until the food tastes good.
My favorite way to use a sweet squash or sweet potato!
This salad fits to pierogi with the meat filling. You may also try it with fried or grilled fish.
This Nicoise Salad is a beautiful play off its French counterpart. It keeps the traditional string beans, potatoes, boiled eggs and tuna, but it adds an Asian inspired dressing that elevates this salad to the next level. By changing the usual white potatoes to sweet potatoes, it becomes a healthier version of the recipe. Sweet potatoes provide more vitamins and minerals than regular potatoes and they have fewer calories. Add in the Omega-3 benefits in the tuna, the protein of the eggs, and fibre-packed beans, and you have got a power packed lunch that tastes like a million dollars. This recipe will certainly be singing to your taste buds tuna.

The beautifully blended mix of herbs, vegetables and succulent chicken, create a mouth-watering dish that can be enjoyed for lunch or dinner.

Delicious low calorie recipe submitted by Jamie! Found in "Real Simple" magazine.
Fresh blueberries, roasted sweet corn, soy bean, red bell pepper and peppery arugula are tossed with a white wine vinegar-olive oil vinaigrette. It's a light and tasty summer salad that accompanies well with any barbecued dishes.
This is a type of meat salad that is an "unofficial" national dish of Laos and is also made in Thailand. It is a dish of ground meat, flavored with lime juice and fish or soy sauce and various other ingredients such as chilies, cilantro and mint.
I loved this salad so much, I had to ask the chef for the recipe. I knew it had to be easy but there was an ingredient that I couldn't figure out. That's because I've never even heard of it before-Sumak! Pair this up with some hummus and bread and you will be so happy!
Fresh sweet cherries and quinoa are tossed with celery, creamy goat cheese, toasted almonds and tangy white wine vinaigrette.

My version of Bobby Flay's very distinctive southwestern, egg-less potato salad from his restaurant, Mesa Grill. Make sure you pour the sauce over the potatoes while they're still warm to ensure the flavors soak in. This salad goes nicely with grilled meat, poultry or seafood.
On a hot summer evening, this is a refreshing version of the typical mayonnaise laden potato salad. Serve with grilled fish or chicken and sherbet for dessert!
