Sweet potatoes, carrots and cranberries in cream cheese quiche -- This recipe has become a real holiday favorite in our family. It is sweeter than most quiches, but not as sweet as most pies, and can be eaten either as a side dish, or as dessert.

Ricotta is mixed with potato, prosciutto and egg, and bake it like baking a bread in a loaf pan, the flavor is absolutely delicious; and it is served with grilled bacon, grilled bread and roasted cherry tomatoes.

Every year before my grandkids come over to my place, I usually bake a large batch of these cookies, and everyone loves them. I do however add some chocolate chips to the batter, and they are some great addition.

I recommend bringing this to your Thanksgiving function; you will be thanked many times for this delicious taste treat. This is a large quantity, but you will end up making this size batch more than once. You can also make muffins and small loaves using this recipe; bake for 30 to 35 minutes
