This was THE BEST EVER! So moist and so much flavor with just the right amount of 'kick' to it. I loved loved LOVED this and so did my guest! This gets more than 5 stars! and a double blue ribbon! :)
This is a great dish to serve guests when you really want to impress them. Looks wonderful to the eye, especially using yellow and red peppers for some contrasting colours. And the taste is perfect for summer or any season. Very light and fresh with little bursts of flavors and textures.
Phyllo pastry gives the tart super crispy texture, feta cheese and juicy tomatoes are absolutely a delicious combo. Serve with some fresh basil leaves on top to add a final refreshing touch.

Made this impossible garden vegetable pie for lunch today , and it was cheesy and delicious. I browned the onions first for about 5 minutes, put the broccoli and bell peppers into the pan, and cooked for another 2 minutes to develop more flavors. Then followed the recipe, and it came out golden-brown on the top, very moist and tasty.
