The Winter Wonderland continues here in Upstate NY, and for those who aren’t lucky enough to be somewhere tropical right now…well…we wish we were. Though I can’t get to somewhere warm right now, I rounded up the most sunshine-inspired ingredients in my kitchen and combined them with mega-vitamin packed kale for a tasty tropical treat.
My version of Bobby Flay's very distinctive southwestern, egg-less potato salad from his restaurant, Mesa Grill. Make sure you pour the sauce over the potatoes while they're still warm to ensure the flavors soak in. This salad goes nicely with grilled meat, poultry or seafood.
Who said dessert had to be difficult! This recipe is soooo easy and it turns out pretty good. Serve topped with vanilla ice cream and drizzle some hot fudge over it all. Your guests will love it! This is not one of my all-time favorite recipes, but it is definitely a really good recipe to have!

Soft, sweet bread, that can be eaten neat, or with sweet or salty supplements. Kids love it, grown-ups love it. Not as sweet as brioche, though. It's always a success!

Lovely mingle of flavours. I toasted the walnets. Used dried tarragon but soaked in the oils w/orgainc cider vinegar in advance. Oh yeah and added 1 clove of finely minced garlic. A big hit with or without the garlic. High class side dish using the fresh beans from my local country road farmer.

A different approach to classic German apple pancake, it tastes more sophisticated. Kids will find more fun from these rolled-up pancakes stuffed with applesauce and raisins, smothered in a custard-like creamy mixture.
Delicious cornbread, and the texture was great. I used whole wheat flour, and the bread still came out soft and fluffy. Used 2 large eggs instead of 3 egg whites, 2% milk, and 2% yogurt instead of fat-free version, which definitely gave the cornbread a richer taste. Served it with homemade kale, potato and white navy bean soup. A delicious and hearty meal.
This quick and easy pasta dish tastes delicious. For a vegetarian version, just omit the anchovies, and it is still refreshingly tasty.
