Found this recipe in donna hay magazine, and I just happened to have all the ingredients this recipe called for. I did make a few changes and cook it differently. The frittata came out delicious, but next time I will cook it on the stove top first to give a nicely browed bottom, then broil at the last a few minutes.
Perfect for feeding a crowd and easily scaled to feed a larger crowd. No spices to disagree with anyone, just solid belly warming filling goodness.
You don’t have to miss out on a family favourite with this gluten-free option. Mushrooms are filled with goodness from important minerals like Potassium (which aids the function of nerves and muscles – including the heart) and Selenium (which protects the body’s cells) to many B vitamins (which are important for the nervous system). Ancient Egyptians believed they were the plant of immortality according to hieroglyphics – they banned commoners from eating them so that royalty could have an abundant supply. These tacos were delicious! Made them for a recent family dinner, and everyone at the table just kept asking for more. Thank goodness that I had enough to cover everyone's appetite :)
Chia pudding is one of our favourite breakfasts and if you like peanut butter and jam together then this deliciously sweet almond butter and jam delight is for you. It makes a fantastic breakfast or dessert and it’s so easy to make too. We like to make ours before bed so it’s all ready for when we wake up in the morning.

This sweet coconut pudding is a wonderful treat. The recipe gets its roots in the Philippines and is traditionally served on the holidays and special occasions. Coconut milk provides you with a healthy amount of Vitamins C, E, and B. It has minerals that will promote healthy teeth and the creation of red blood cells. Don’t be concerned about the condensed milk. As long as it is enjoyed in moderation you should be ok and unsweetened versions are available. Condensed milk does offer some health benefits like calcium, potassium, and Vitamin A. So go ahead and enjoy this recipe at your next special occasion.
