Super quick and easy to make, instead of canned tomatoes, I used cherry tomatoes and made our own dressing and kept in the refrigerator for about 2 hours to let marinate; the flavor came out delicious, because of cherry tomatoes, it was more like a salad, definitely is a keeper.

Quite nice, very soft creamy and delicate texture inside the cakes. The sweet and slightly spicy parsnip and sweet corn work well together. We served them with some homemade sweet chili sauce.

I omitted the parsley and scallions (had none) and used chopped onion instead. I also added some red pepper flakes for some heat. I treated this as a marinade for my boneless, skinless breasts, which cut cut into strips and marinated overnight. I skewered the strips and grilled for 5-6 min. per side. Excellent flavor.

This is a traditional English sweet. Moist, rich cake with dates, covered in a caramel/toffee sauce. Best served warm.
Miso and sesame paste made a delicious base for the stew. Soba noodles and tofu absorbed all the yumminess. Carrots, corn and peas added beautiful color to the stew. Tatsoi could be easily replaced by spinach, kale or Swiss chard. A wholesome and filling Asian style stew.

This quick corn stir-fry is packed with flavors, sichuan hot chili oil and peppercorns give the sweet corn lots of yumminess. If you don't like the corn on the cob, simply scape the kernels off, or frozen corn can be used as well.
That was the lunch we made yesterday, and we made a few changes (see the linked recipe below). We used cheddar instead of velveeta cheese, fresh broccoli, and omitted the butter. An easy-one-dish meal and quite tasty.
