Vegan Chocolate Mousse
Smooth, thick and creamy. If too thick use the firm silken tofu not the extra firm. After 2 hours the extra firm tofu makes the mousse have the consistency of butter cream icing.

3 to 5 ounces of dark dairy free chocolate
6 ounces extra firm silken tofu
1/4 cup chocolate soy or almond milk
1 tsp vanilla extract
2 tbsp "Sweet Dreams" brown rice syrup
pinch of salt

3 to 5 ounces of dark dairy free chocolate

Directions
Melt chocolate in top of double boiler. Blend remaining ingredients until smooth. Test for sweetness, add more rice syrup if necessary. Put in individual dishes and chill in fridge for 2 or more hours.
