Ugly Cake
Submitted by janne
Ugly Cake earns its name as the cream cheese topping bakes down into the yellow cake batter, leaving craggy peaks of sweetened cheese frosting on top. Looks rough, tastes like glory.

1 hrsDon’t let the name scare you off. Ugly Cake is a Southern potluck legend that goes where pretty cakes can’t, building its own gooey, cracked, sugar-veined topping right in the oven without a frosting bowl in sight.
The magic happens because the cream cheese and powdered sugar mixture sinks partway into the batter while baking, leaving lumpy, golden peaks where it stays on top. That’s the whole deal: looks like a wreck, eats like a dream.
A boxed yellow cake base does the heavy work, so this comes together fast. Skip flouring the pan, butter alone gives you that buttery edge without leaving a chalky crust on the bottom.
Kitchen Tips
- Soften the cream cheese and butter fully before mixing, otherwise you get lumps that won’t smooth out and you’ll fight the spoon spreading it over the batter.
- Spoon the topping in dollops rather than spreading, the gaps create the signature ugly peaks as it bakes.
- Turn out while hot and scrape any topping that stuck to the pan back over the cake while it’s warm and pliable.
- Cover and refrigerate leftovers, the cream cheese topping needs cold storage after the first day.
Variations
- Use a chocolate cake mix and add cocoa powder to the topping for a chocolate cream cheese version.
- Stir lemon zest and a splash of juice into the cream cheese mixture for a tangy lemon cream cheese cake.
- Sprinkle chopped pecans or toasted coconut over the topping before baking for a praline-style finish.

What do you turn the cake out into? It runs all over my counter. I can't figure out how. There's no cake pan big enough to catch the yummy runoff.
I had a friend make is with a chocolate cake mix and put it in a bunt pan. (she also sprinkled some chocolate chips and walnuts in with the cream cheese mixture) then she turned it out on a big round plate/platter. it was delicious.... and ugly. But everyone loved it!
