Seven ingredients. One bowl. One egg. One ridiculously good batch of chewy walnut bars.

A single beaten egg gets whipped with brown sugar and vanilla, then the dry ingredients and a full cup of chopped walnuts fold right in.

The batter goes into a greased 8-inch square pan and bakes until set but still slightly gooey in the center.

Cut into squares while warm and try not to eat half the pan before anyone else gets to them.

They’re somewhere between a blondie and a nut bar, with edges that crisp up and a center that stays soft and chewy.

Kitchen Tips

  • Beat the egg until truly foamy before adding the sugar. This is what gives the bars their lift since there’s no butter or oil in this recipe
  • Chop the walnuts into varied sizes. Some chunky, some fine. It gives every bite a different crunch
  • Check at 25 minutes. You want the top set and golden but the center still slightly soft. They firm up as they cool
  • Serve warm with a dusting of powdered sugar or a scoop of vanilla ice cream for a proper dessert moment
