S'more Tacos

A playful twist on s’mores: a warm corn tortilla smeared with peanut butter and folded around a fire-toasted marshmallow. Three ingredients, about five minutes, no graham crackers required.

5 minThis is a campfire s’more that ditched the graham cracker and went taco. A warm, pliable corn tortilla stands in for the cracker, peanut butter takes the place of the chocolate bar, and a big toasted marshmallow gets folded inside like the world’s gooiest taco filling.
Warming the tortilla is the move that makes it work. A few seconds in a toaster oven, or a quick steam between damp paper towels in the microwave, turns it soft and foldable instead of cracking. Smear on the peanut butter while the tortilla is hot so it goes melty.
Toast your marshmallow over any open flame until golden and molten, set it on the peanut butter, fold, and squeeze. Sticky, warm, and ready in about five minutes.
Kitchen Tips
- Steam, do not toast, the tortilla if you want it bendy; a dry toaster crisps it and it cracks when folded.
- Toast the marshmallow slowly and rotate it for an even golden crust without a charred, hollow center.
- Use crunchy peanut butter for texture, or swap in chocolate-hazelnut spread to go full dessert.
Variations
- Add a square of chocolate or a few chocolate chips for a true s’more.
- Tuck in banana slices or dust with cinnamon sugar before folding.

- Heat corn tortillas one of two ways.
Option 1: If you have a toaster oven, put them into toast on low for about 1 minute, but keep your eye on the toaster oven. Sometimes they can be a bit unruly.
Option 2: If you have a microwave, place your corn tortillas inside two dampened (but not wet) paper towels, like placing them inside a damp paper towel envelope. Microwave for 30 seconds.
*Note: Option 2 is a great way to get steamed corn tortillas in a jiffy.
Smear 1 teaspoon peanut butter on each heated corn tortilla, taking care not to burn your fingers.
Thread two marshmallows onto a hanger or stick of some sort. (I used a bamboo skewer and was very careful to make sure things were not going to light up in the wrong sense). Then choose your open flame and carefully rotate your skewered marshmallows like turning a spit so the long sides of the marshmallows get toasted.
Place skewered marshmallows in the middle of your peanut butter smeared tortilla and as you’re folding up the sides of your tortilla, pull the stick or skewer out. Now squeeze gently to allow all that toasted marshmallow goodness to mingle with the peanut butter.
