Spain’s national pitcher drink at its most stripped-down: dry red wine, lemon and orange juice, a touch of sugar, and ice. No fancy fruit chunks, no brandy, no lemon-lime soda. Just the four ingredients that built sangria reputation across centuries of Spanish tables.

Use a wine you would actually drink. Cheap, harsh red wine makes harsh sangria; a basic Tempranillo, Garnacha, or Spanish Rioja gives the right depth without breaking the bank. Steer clear of bold California Cabernet, which can taste oaky and tannic when chilled.

Fresh-squeezed citrus is the rule. Bottled lemon juice tastes flat and metallic, and the cocktail relies entirely on bright citrus for its character. Roll the lemons firmly on the counter before squeezing to maximize juice yield.

Dissolve the sugar fully before adding the wine. Granulated sugar refuses to dissolve in cold wine, leaving you with sweet sludge at the bottom of the pitcher. Stir it into the warm citrus juice first.

Let the mixed sangria chill for 30 minutes to an hour before serving. The flavors marry better with rest, and a too-warm pitcher melts your ice on contact.
