Give your meal a new look by adding this simple salad that combines classic flavors of creamy fresh mozzarella, tomatoes and basil.

Ingredients

½pound mozzarella cheese fresh or buffalo if possible
½cup basilVideo fresh, chopped*
4each tomatoes fresh ripe beefsteak or heirloom
¼cup vinegar red wine or balsamic
½teaspoon salt
½cups olive oil, extra-virginVideo good quality (more or less to taste)
¼teaspoon black pepper *

Directions

Slice cheese to about the same thickness you will slice the tomatoes.

Slice tomatoes.

On large platter, arrange alternate slices of cheese and tomatoes.

Sprinkle with basil.

DRESSING:

Combine vinegar, salt, pepper and olive oil in a small bowl or measuring cup.

Drizzle over tomatoes and cheese.

Let marinate at room temperature for up to 1 hour before serving.

Love this salad, before it came out, I was a little bit not sure about the flavor; when I tried first bite, and it was soooo good, the flavor was just so simple, refreshing and tasty. Although we used vine-ripe plum tomato that was sweeter, fresh mozzarella, tomato and basil were perfect combination. Drizzled a little bit balsamic vinegar to give extra zing before serving. Strongly recommend this recipe to everyone, quick, easy and so yummy!

Simple, elegant and super quick and easy to make with fresh clean summer flavors. If you have tomatoes from your garden or score some heirloom or other tasty varieties this is the perfect way to use them up. The plating (see photo) turned out much like a flower.

i switched out the vinegar for fresh lemon juice and seasoned w/salt, garlic & onion powder also; very delish!
