100 minBanana in a meatloaf? Stay with me. The mashed banana disappears into the meat mixture completely, leaving behind an almost mysterious moistness and a faint sweetness that plays off the warm spices. You won’t taste “banana” but you will notice this loaf stays juicier than most.
Nutmeg and allspice bridge the gap between the savory ground beef and the fruit elements. Quick oats bind everything without making it dense, and the green bell pepper adds a fresh bite throughout. On top, crisscrossed bacon renders down as the loaf bakes, basting the surface in fat while the orange marmalade caramelizes into a sticky, tangy glaze.

Heat the oven to 350℉ (180℃).
Mix all of the ingredients, except the bacon and marmalade, together.
Spread the mixture in an ungreased loaf pan, 9 X 5 X 3-inches.
Crisscross the bacon slices on the top of the meat mixture and spread the marmalade over the whole thing.
Bake, uncovered for 1 to 1¼ hours.
Drain off the excess fat and let stand for 5 to 10 minutes before slicing.
