Low Calorie Irish Colcannon



Low Fat, Fat-Free, Low in Saturated Fat, Low Cholesterol, Cholesterol-Free, Trans-fat Free, Low Carb


1 cup water
1 tablespoon margarine
¼ teaspoon salt
3 cups cabbage
cup milk, skim
or 1% milk
1 cup potatoes, instant
1 each scallions, spring or green onions
finely chopped


  1. In a medium saucepan, combine water, margarine, and salt.

Bring to boil.

Stir in cabbage; return to a boil.

Reduce heat, cover and simmer 4 to 6 minutes, or until cabbage is tender.

  1. Remove from heat; stir in milk and potato flakes with fork. Stir in onion.

Cover and let stand 3 minutes.
