Three ingredients, twenty minutes, and you’ve got warm honey roasted peanuts that taste better than anything from a can. Melted butter and honey tossed with raw peanuts, spread on a sheet, and baked until golden. That’s the whole recipe.

Heating the butter and honey together before tossing with the peanuts ensures an even, thin coating on every nut. Cold honey straight from the jar is too thick and sticky to distribute evenly. Warming it with butter thins the mixture into a glossy glaze that wraps around each peanut.

The 5-10 minute bake window is short and requires attention. Peanuts go from golden to burnt in about 60 seconds at this stage. Start checking at 5 minutes and pull them the moment they turn a shade darker than you want. They continue browning from residual heat on the hot cookie sheet after leaving the oven.

The honey caramelizes during baking, creating a thin, crunchy shell around each peanut that shatters when you bite through. As they cool, the coating hardens further and the peanuts develop that signature crunch that store-bought versions try to replicate with added sugar and stabilizers.

Pro Tips

  • Spread the peanuts in a single layer with space between them. Clumped peanuts steam instead of roasting and won’t develop an even coating.
  • Use raw, unsalted peanuts for the best results. Already-roasted peanuts will overcook and turn bitter in the oven.
  • Let them cool completely on the sheet before transferring. The honey coating is soft and sticky when warm but firms up as it cools.

Variations

  • Spicy honey: Add ¼ teaspoon cayenne pepper to the butter-honey mixture for a sweet-heat snack.
  • Cinnamon sugar: Toss the hot peanuts with a mix of cinnamon and sugar right out of the oven for an extra coating.
  • Rosemary honey: Stir a teaspoon of finely chopped fresh rosemary into the honey-butter for a savory-sweet twist.
