Homemade Vanilla Wafers

Make your own 'Nilla wafers for use in recipes calling for vanilla wafers (or just for tea time!). Includes variations for sugar-free vanilla wafers and gluten-free vanilla wafers.

Directions

  1. Preheat oven to 400℉ (200℃) F. Separate the eggs. Sift the flour.

  2. Cream together the shortening (or softened butter) with sugar until light and fluffy. Add well-beaten egg yolks.

  3. Measure ½ cup of the flour and sift together with cream of tartar, salt, and baking soda. Combine with egg mixture. Mix thoroughly. Add vanilla extract.

  4. Beat the two egg whites until stiff peaks have been reached. Fold into the egg mixture. Fold/incorporate enough flour to make a soft dough, about 1 ½ to 2 cups.

  5. Turn onto a lightly floured board and roll to ⅛ inch thick. Cut with floured small round cutter. Place on slightly oiled baking sheet, or lined with a Silpat baking mat, or parchment paper.

  6. Bake for 10 minutes. Cook on a wire rack.

Sugar-free vanilla wafers

Substitute 1 to 1 baking sugar replacement (e.g. Splenda) for the sugar called for in the recipe.

Reduced sugar vanilla wafers

We like to reduce the sugar in our wafers, by using ½ sugar replacement and ½ granulated sugar.

Gluten-free vanilla wafers

Substitute your favorite gluten-free flour for the all-purpose flour listed in the ingredients. Gluten-free flour works quite well in this recipe as gluten isn't needed. The rising of wafers during baking in nearly solely accomplished by the magical power of the eggs!

How can you have vegetable shortening as an ingredient and then show 0g fat in the Nutrition Facts???
