Ingredients

3 cups tomato juice
1 medium onions
minced
2 medium tomatoes
diced
1 each green bell peppers
minced
1 clove garlic
crushed
1 medium cucumbers
diced
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 teaspoon tarragon leaves
1 teaspoon basil
minced, fresh

1 pinch cumin
ground

1 dash red hot pepper sauce

2 tablespoons olive oil
1 x salt and black pepper
to taste

Directions

Combine all ingredients and chill for 2 hours.

HINT: Out of time? Forget all the mincing and chopping.

Cube the vegetables, then throw all of the ingredients into a blender or food processor and blend slowly until the vegetables are chunky and the soup is well blended.
