Ginger-Sweet Potato Soup
This fat-free, cholesterol-free, low calorie soup provides major health benefits from the ginger and sweet potato, a superfood. Sweet potatoes provide a great source of beta-carotine, vitamin A, and healthy carbs. Its a good idea to replace cold smoothies with warm healthy soups, broths, etc in the winter.

Directions
Bring water to a boil in a large saucepan. Add remaining ingredients. Cover, reduce heat, and simmer 30 minutes. Place half of sweet potato mixture in a blender, until smooth. Return puréed mixture to saucepan, cook until thoroughly heated.
