Garlic Scape and White Bean Dip
Garlic scapes lift this bean dip into a seasonal, delicious and healthy beginning of summer dip.A fluffy and billowing fresh green colored dip with a velvety texture and mildly assertive green garlic warmth to wrap around any crudites of your choosing.
about 4 or 5 shoots, trimmed and sliced
about ½ lemon
or more if needed
olive oil, extra-virgin
plus more for garnish if desired
or cannelloni beans, canned, drained and rinsed
Prepare the garlic scapes by trimming off the fibrous top, just above the bulbous part and trim off the bottom slightly; see photo. Slice the trimmed garlic scapes into 1 inch (2 cm) pieces.
Add the garlic scapes to a food processor with the lemon juice, salt, and black pepper. Process until finely chopped, pulsing and scraping sides as needed; about one minute.
Add the beans and pulse until you achieve a rough puree. With the food processor running, drizzle in the olive oil + 2 or 3 tablespoons of water until fairly smooth.
Taste and adjust seasoning with additional salt, black pepper, and lemon juice.
Makes about 1 ½ cups of dip.
Serving Garlic Scape Dip
Transfer to a shallow bowl, spreading out attractively and drizzle with olive oil, and sprinkle with a bit of flaky sea salt and a fresh grind or two of black pepper.
Serve with tortilla chips, crudites (carrot/celery sticks, etc.), bread, crisps or crackers or other suitable dippers.
