2 hrsThis baked fruit compote takes dried apricots, apples, and peaches and transforms them low and slow in the oven with water until they plump up soft and jammy. A full pound of mixed dried fruit plus a cup of raisins means concentrated sweetness before the honey even goes in.
The two-stage baking is key. The first 90 minutes rehydrates the dried fruit until it’s tender but still holds its shape. Then the honey gets stirred in gently (rough stirring tears the softened fruit apart), followed by sliced fresh lemon and orange. That second 30-minute bake lets the citrus oils infuse through the warm syrup.
The fresh citrus slices do double duty here. They cut through the sweetness of the honey and dried fruit, and they look gorgeous floating in that amber syrup. Serve this warm over vanilla ice cream, cold with yogurt for breakfast, or at room temperature as part of a holiday spread.

Directions
Preheat oven to 275℉ (140℃).
Put the dried fruit, rasins and water in a shallow baking dish .
Place in oven and bake 1½ hours.
Remove from the oven and stir in the honey, being careful not to tear the fruit.
Slice the lemon and orange.
Gently stir into the cooked fruit.
Return to the oven and bake 30 minutes longer.
Serve hot or cold.
