40 minCreamy, cozy, and made from almost nothing, this is the kind of potato soup that proves you don’t need a long ingredient list to eat well. Tender potatoes and celery get simmered down, then folded into a silky white sauce for body and richness.
Save a cup of that starchy potato cooking water before you drain. Stirred back in, it carries real potato flavor and helps the soup taste like more than the sum of its parts.
The white sauce is what turns boiled potatoes into soup, thickening everything into a smooth, spoon-coating base. Let it simmer a while so the flavors settle, then season generously, since potatoes drink up salt.
From here it’s your call: leave it rustic and chunky, or puree it silky-smooth. Either way, a scatter of crunchy croutons on top is the finishing move.
Kitchen Tips
- Save the starchy potato broth as directed; it adds flavor and body you’d lose with plain water.
- Cook the white sauce until properly thick before adding the liquid, so the soup doesn’t turn out watery.
- Season at the end and taste as you go; potatoes need more salt than you’d expect.
- For the best of both textures, puree half the soup and leave half chunky.
Variations
- Stir in shredded cheddar, crisp bacon, and chives for a loaded baked-potato soup.
- Add sauteed onion, leek, or garlic for deeper savory flavor.
- Use a dairy-free white sauce and plant milk to keep it fully vegan.
