These are the cut-out sugar cookies you want for any holiday or occasion, sturdy enough to hold a crisp shape but tender enough to actually enjoy eating. Creamed butter and sugar give them a rich, melt-in-your-mouth crumb and a clean canvas for frosting.

The step you can’t skip is the chill. After mixing, the dough needs at least an hour in the fridge; cold dough rolls out cleanly and, more importantly, holds its edges in the oven instead of spreading and blurring your carefully cut shapes.

Roll, cut into hearts or whatever shapes you like, and bake just until set. Once cool, they’re a blank slate for icing, sprinkles, and decorating.

  • Chill the dough the full hour; warm dough spreads and loses the sharp edges of your cutters.
  • Roll to an even thickness so the cookies bake at the same rate.

Directions

Preheat oven to 350℉ (180℃).

Cream together butter and sugar.

Stir in eggs and vanilla.

Combine flour and baking powder.

Chill for at least one hour, and then roll dough out.

Cut into heart shapes, or whatever shape you like with cookie cutters.

Bake for 12 to 14 minutes.

Let cool, and decorate if desired.
