Cocanes

Cocanes are old-fashioned butter cookies made with brown sugar, shaped into fingers, and baked in a hot oven. No liquid needed. Just six ingredients, mixed by hand, yielding 2 dozen crumbly, buttery bites.

30 minThese old-fashioned finger-shaped cookies are about as simple as baking gets. Six ingredients, no liquid, no fuss.
You mix everything by hand until the dough holds together, roll it out half an inch thick, and cut it into finger shapes. Into a hot oven they go until golden and firm around the edges.
The brown sugar gives them a deep, caramel-like sweetness while the generous amount of butter keeps them rich and crumbly. They’re the kind of cookie your great-grandmother made without measuring twice.
Kitchen Tips
- The dough should be firm enough to hold its shape; if it’s too sticky, chill it for 15 minutes before rolling
- Watch them closely in the hot oven since they can go from golden to burnt fast
- These keep well in a tin for up to a week, if they last that long
