Chicken on wheels: flattened chicken breast strips rolled around a cheesy filling of onion, garlic, almonds, cilantro, and ajwain, then baked and sliced into spiral pinwheel bites.

These spiral chicken bites are part appetizer, part showpiece. Chicken breasts get pounded thin, cut into strips, then rolled around a savory filling and baked until they slice into neat little pinwheels.

The filling is where it gets interesting. Alongside cheese, onion, garlic, and cilantro, there’s chopped almond for crunch and a pinch of ajwain (carom seed), which brings a warm, thyme-like aroma common in Indian cooking. It’s a small touch that makes these taste like more than your average stuffed chicken.

Flatten the breasts evenly so they roll up tight without tearing, and slice them into rounds only after baking so the filling stays put.

  • Pound the chicken to an even thickness so it rolls tightly and cooks evenly.
  • Don’t overfill; too much filling and the rolls burst open as they bake.
  • Let the rolls rest a few minutes before slicing so they hold their spiral shape.

  • Swap the almonds for cashews or pine nuts.
  • Add chopped spinach or grated carrot to the filling.

Ingredients

Chicken breasts 3-4
Mozarella or processed cheese grated 3tbsp
Big onion chopped 1
Cilantro leaves 1tbsp
Garlic flakes chopped 2-3
Ajwain 1/2tsp
Oregano 1tsp
Almonds chopped 1tbsp
Paprika powder 1/2tsp
Black pepper powder to taste
salt to taste
Oil for greasing

Directions

  1. Slice the chicken breasts from between and flatten them with the help of a rolling pin.
  2. Spread salt and paprika powder to the chicken pieces. Cut the chicken sliced chicken breasts into strips, the strip should be enough in width to fill up the filling.
  3. Meanwhile prepare the filling, for that take a big bowl put the cheese, onion, ajwain, garlic flakes, cilantro, almonds then seasonsed them with black pepper powder, oregano and salt. Mix it well.
  4. Put the filling in the between and roll the chicken strip well.
  5. Grease the baking tray with oil and bake it for 300℉ (150℃) for 15 to 20 minutes in a pre-heated oven.
  6. Cut into small pieces.
  7. Garnish them with cilantro leaves.
