2 hrsIf you want a ham that makes people gasp when it hits the table, this is the one.
A 5 to 7 pound ham gets scored in a classic diamond pattern, then basted with a sticky-sweet glaze built from cherry pie filling, orange marmalade, fresh OJ, and a hit of sherry.
The syrup caramelizes into a glossy, jewel-toned crust while the reserved whole cherries get tucked on top as a garnish that doubles as dessert.
Serves 10 to 15, so it’s built for Thanksgiving, Christmas, Easter, or any gathering that calls for a real centerpiece.
Chef Tips
- Score the fat in shallow cuts only; go too deep and you’ll dry out the meat
- Baste every 10 minutes during the final 30 minutes for maximum glaze buildup
- Strain the pie filling carefully and save every drop of that syrup for the glaze
- Let the ham rest 15 minutes after baking so the juices redistribute before carving
