It's easy to take little creativity to recognize where this easy soup got its name. The only hands-on cooking you will have to do is browning the ground beef!
The rest of this beef soup recipe is simply adding in the remaining ingredients, bring to a boil, and letting it simmer hands-free for an hour.
The base of the soup is made from sautéed ground beef and onions. Browning them together builds up a fond, those flavourful brown bits that develop in the bottom of the pot. Using pre-packaged vegetables and canned tomatoes saves on preparation time. Adding in the pearl barley bulks up this easy soup with complex starches, and once it's finished cooking in the flavorful stock, this beef soup is ready to serve. No chopping and no peeling; a hearty and savory main dish brought to your family table with ease after a busy day.
How to make soup
Heat a Dutch oven or large pot over medium-high heat. Add the ground beef (beef mince) and chopped onions to the pot, breaking up the beef with the back of a spoon until well browned, about 7 minutes.
Add the remaining ingredients, scraping up and brown bits (fond) that developed on the bottom of the pot. Bring the beef barley soup mixture to the boil, cover, and reduce heat to maintain a simmer for round about an hour or until the barley is tender.
Remove from heat and serve.
