Three ingredients, one bowl, no cooking. Packed brown sugar, finely chopped nuts, and ground cinnamon mixed together create the classic filling you sprinkle inside cinnamon rolls, swirl through coffee cake batter, or layer into braided sweet bread.

Brown sugar is the backbone. Its molasses content gives the filling a deeper, more caramel-like sweetness than white sugar, and it melts during baking into sticky, gooey pockets throughout the dough.

Finely chopping the nuts is important. Large pieces tear through soft dough when you try to roll it and create holes where the filling leaks out.

Kitchen Tips

  • Pack the brown sugar firmly when measuring. Loose brown sugar throws off the ratio and the filling ends up dry and sandy.
  • Chop the nuts fine but don’t grind them to powder. You want small, distinct pieces that add crunch without disappearing.
