Brown sugar is the backbone. Its molasses content gives the filling a deeper, more caramel-like sweetness than white sugar, and it melts during baking into sticky, gooey pockets throughout the dough.
Finely chopping the nuts is important. Large pieces tear through soft dough when you try to roll it and create holes where the filling leaks out.
