Bok choy and shiitake are always good combination together, served with this refreshing sesame orange dressing, light and delicious side dish.

dried, stems removed and sliced

TABLESPOONS ML ORANGE JUICE

TABLESPOON ML TAHINI (SESAME PASTE)

TEASPOONS ML SOY SAUCE, LIGHT
½ 2.5
TEASPOON ML GINGER
freshly grated

Directions

Place a steamer basket in a large pot.

Put enough water in the pot, just to reach bottom of basket.

Bring to a boil.

Add bok choy.

Reduce heat to medium-low, cover and steam about 8 minutes or until bok choy is tender.

Prepare a bowl with ice cubes and water, set aside.

Transfer steamed bok choy in ice water, drain well.

In a medium skillet over medium-high heat, add ½ tablespoon of oil until hot.

Stir in mushrooms.

Cook about 6 minutes or until mushrooms are tender, stirring once halfway through cooking.

In a large bowl, whisk together orange juice, tahini, soy sauce and ginger.

Stir in bok choy, mushrooms, and carrots and toss to coat.

Garnish with sesame seeds.

Serve warm or chilled.
