Mashed black beans, fresh green cabbage with creamy avocado sauce, this combination makes a lovely and delicious sandwich that fills you up with lots of goodness.

Ingredients

15 ounces black beans
rinsed, or you can use dried beans
4 tablespoons salsa
1 tablespoon jalapeño pepper
chopped, or more to taste
½ teaspoon cumin
ground, or more to taste
1 each avocados
ripe, pitted
2 tablespoons onions
finely chopped
1 tablespoon lime juice
1 each bread, french baguette
whole grain, about 20 inches long

1 ½ cups cabbage
shredded

Directions

Mash beans with a folk in a medium bowl, then mix in salsa, jalapeño and cumin.

Mash avocado with a folk in a small bowl, then mix in onion and lime juice.

Cut baguette into 4 equal lengths.

Split each piece in half horizontally.

Pull out most of the soft bread from the center then left with mostly crust.

Divide the bean paste, avocado mixture and cabbage evenly among the sandwiches.

Cut each one in half and serve.

Delicious! Yesterday I made this yummy sandwich with fresh whole grain baguette that my husband made from scratch.

We used homemade salsa, and I also added about 1/4 cup cilantro into it. Our sandwich turned out absolutely delicious.

Will be making this recipe again for sure!
