40 minThese open-faced bagels bring together the smoky sweetness of roasted red bell peppers with thick rings of caramelized red onion for a bite that punches well above its weight.
The beauty here is the simplicity. While the peppers and onions blister in the oven, you toast the bagels and let everything come together in minutes.
A light smear of cream cheese ties it all together, and a crack of black pepper on top gives each bite just enough edge.

Cut red bell pepper lengthwise into four pieces, clean out, and place on piece of aluminum foil into toaster oven together with the onions.
At 400℉ (200℃) bake for about 20 minutes, or until bell pepper is soft and skin bliste ring. Take out peppers and put bagel halfs into toaster oven. Remove skins from red peppers. By the time you are done, the bagels are toasted .
Arrange bagels open-faced on plate. Put onions on two of the halfs. Put a bit of cream cheese and 2 pieces of roasted bell peppers on the other two .
Sprinkle black pepper onto the bell peppers. Serve immediately.
