These spicy cheese crackers are a cocktail-hour classic that survived the decades for one reason: they take five minutes to mix, six minutes to bake, and disappear in seconds. The full teaspoon of cayenne earns the name diablo, so adjust if your crowd is heat-shy.

Use the sharpest aged cheddar you can find. Mild cheddar gets lost behind the cayenne and butter. A truly aged sharp cheddar punches through with that funky, almost crystalline bite that makes these unforgettable.

The ratio works because the cheese essentially is the dough. There’s no egg, no liquid, just butter, flour, cheddar and pepper. The cheese melts during baking and binds everything together while crisping the edges.

A blistering 450°F (230°C) oven is what gives these their signature snap. Lower heat would melt the cheese into a greasy puddle. High heat sets the dough fast while the butter and cheese do their crisping work.

Directions

Mix all ingredients and shape in 1 inch balls. Arrange about 2 inches apart on baking sheet and bake in very hot oven at 450℉ (230℃). about 6 minutes. Serve hot or cool.
