Filipino calamari stew with squid simmered in garlic, vinegar, soy sauce, and pepper: tender in 10 minutes, served immediately while still hot and tangy.

Bring garlic, vinegar, soy sauce, water, salt, and pepper to a rolling boil in a skillet, then drop cleaned squid into the bubbling liquid.

Cook just three to four minutes, stirring occasionally, until the squid turns opaque and tender.

Transfer to a platter and serve immediately while it’s still steaming hot.

This is Filipino comfort food at its fastest: tangy, garlicky, and ready before you can set the table.

Serves four to six.

Chef Tips

  • Remove transparent cartilage when cleaning squid for better texture
  • Add squid to already-boiling liquid for even, quick cooking
  • Cook only 3-4 minutes; overcooking turns squid rubbery and tough

Directions

In a skillet over medium heat, bring to a boil the garlic, vinegar, soy sauce, water, salt and pepper to taste.

Add the cleaned squids while mixture is still boiling.

Cook for another 3 to 4 minutes. Stir occasionally.

Transfer cooked squid to a serving platter.

Serve immediately.

Tip: Remove the transparent cartillage when clean squid.
