Filipino calamari stew with squid simmered in garlic, vinegar, soy sauce, and pepper: tender in 10 minutes, served immediately while still hot and tangy.

10 minBring garlic, vinegar, soy sauce, water, salt, and pepper to a rolling boil in a skillet, then drop cleaned squid into the bubbling liquid.
Cook just three to four minutes, stirring occasionally, until the squid turns opaque and tender.
Transfer to a platter and serve immediately while it’s still steaming hot.
This is Filipino comfort food at its fastest: tangy, garlicky, and ready before you can set the table.
Serves four to six.
Chef Tips
- Remove transparent cartilage when cleaning squid for better texture
- Add squid to already-boiling liquid for even, quick cooking
- Cook only 3-4 minutes; overcooking turns squid rubbery and tough
