2 tablespoons parsley leaves minced
2 tablespoons vegetable oil
1 each garlic clove crushed
1/2 teaspoon basil crushed

Thaw fish if frozen. Place fish in shallow baking dish. Combine orange juice, soy sauce, parsley, oil, garlic and basil. Pour over fish. Let stand at room temperature for 2 hours, turning steaks occasionally. Drain, reserve marinade. Place fish in a well greased wire grill basket or cook directly on grill.

Reviews

I used this recipe with steelhead trout fillets. It was absolutely delicious. I modified it slightly. I used lime juice instead of orange, I added a couple of green onions diced and I specifically used extra virgin olive oil.

Granola Bars

This is an awesome recipe! It is a hit with everyone, even the ones who don't like 'healthy' food. The only changes I made were to omit the sunflower and sesame seeds and raisins, and to replace carob chips with semi-sweet chips. Hope I find more recipes like this!
