Ingredients

1 1/4 cup rice converted
1/2 cup butter or margarine, melted
2 1/2 cups chicken broth up to 3 cups
3 cups chicken cooked, chopped (to 4 cups)
2 each mushrooms, canned canned, drained, sliced (4 oz)
6 tablespoons soy sauce
8 each scallions, spring or green onions chopped
2/3 cups almonds slivered

Directions

Mix rice with melted butter or margarine in crockpot. Stir to coat rice thoroughly. Add all remaining ingredients, except slivered almonds and 2 tablespoons green onions. Stir well. Sprinkle reserved almonds and green onions over top. Cover and cook on Low 7 to 9 hours, High 3 to 4 hours.

Very easy to make. Great for a work-day. I just set it up the night before, turned it on in the morning, and dinner was ready--with a salad waiting in the frig! The bonus is that it's very tasty, also.
