Apple Cake in a Jar

Ingredients

2/3 cup vegetable shortening
2 2/3 cups sugar
4 large eggs
1 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon nutmeg
3 cups flour, all-purpose
2/3 cup water
3 cups apple grated, peeled
2/3 cup nuts chopped

Directions

Grease 8 wide mouth pint jars.

Fill them 1/2 full with mixture of all ingredients and bake on wire rack of oven for 45 minutes at 325 degrees.

As soon as cake is done, take one out at a time and put on hot lid.

Screw band down after wiping rim.

Do not add any other ingredients.

Multigrain Blueberry and Ginger Muffins

I also made these multigrain muffins, and they were very nice, I love use all kinds of grains, whole wheat flour and cornmeal, they do add the nutty flavor and good for health too. Next time I will sift the flour and baking soda, powder, then after baking the muffins shape should be more evenly.
