90 minThis is the cake that proves you don’t need a stick of butter to get a moist, tender crumb.
Low-fat yogurt and applesauce do the heavy lifting here, keeping things soft and rich while cinnamon, allspice, and cloves fill your kitchen with that warm, spiced aroma that makes everyone wander in asking “what’s baking?"
Plump raisins dot every slice, and a quick yogurt glaze made with brown sugar and vanilla gets drizzled over the top once it’s cooled. It’s the kind of cake that belongs on a Sunday morning table with a pot of strong coffee.
Chef Tips
- Don’t skip the cooling time. The cake needs a full 15 minutes in the pan before flipping, or it’ll crack and crumble.
- For an even moistier crumb, use a full cup of applesauce instead of the smaller amount called for.
- The yogurt glaze thickens as it sits. Drizzle it on right after mixing for the prettiest cascade down the sides of the Bundt.
- Plump your raisins in warm water for 10 minutes if they’re dry. Drain well before folding into the batter so they stay juicy in every bite.
