30 minThese are individual crustless quiches inspired by old-school inn breakfast service. Skipping the pastry crust and baking the egg custard directly in greased ramekins makes assembly faster and the bake time shorter, around 20 minutes versus the hour a traditional quiche needs.
The English muffin pieces are the surprising structural ingredient. Folded into the custard, they soak up egg and milk while baking and end up acting like a savory bread pudding base. The result is a quiche-meets-strata texture, denser and more satisfying than a pure egg bake but lighter than a typical strata.
Sauteed onions matter here. Raw onions added directly to the custard release water as they cook, which thins the egg and leaves limp onion bits throughout. A quick saute caramelizes them slightly and concentrates their sweetness, so they integrate properly into the bake.
Unmolding the baked quiches by running a knife around the edges and inverting them onto plates is the bed-and-breakfast presentation move. Garnished with parsley and a spoon of salsa on the side, they look intentional and impressive on a brunch table.

Beat first 6 ingredients together.
Now fold in cheese, bacon, onions, and English muffins.
Ladle into well greased ramekins and bake in 400℉ (200℃) oven approximately 20 minutes.
Serve either in ramekin or loosen with knife around edges and turn onto plate.
Garnish with fresh parsley and serve with salsa.
