Pasta salad goes full cowboy with this Western-style mashup.

Cooked macaroni gets tossed with cubed Spam, shredded cheddar, carrots, celery, bell peppers, and onions. The dressing is where the magic happens: fat-free mayo blended with Dijon mustard and a hit of barbecue sauce for a smoky, tangy kick.

Chill it for an hour and the flavors meld into something way better than the sum of its parts. Great for cookouts, potlucks, or meal-prepping lunches for the week.

Kitchen Tips

  • Cook the pasta just until al dente. It’ll soften a bit more as it soaks up the dressing in the fridge.
  • This salad tastes even better the next day once everything has had time to marinate together.
  • Add a splash of pickle juice or apple cider vinegar if you want extra tang in the dressing.
