Ingredients

8 ounces shrimp cooked
3 cups rice coooked and cooled
1/2 cup pickles, sweet minced
1/4 cup pimiento diced
1 tablespoon lemon juice
1 x salad greens
6 ounces tuna, canned drained
1/2 cup onions minced
1 1/2 cups celery thinly sliced
3 large eggs hard boiled, chopped
1 cup mayonnaise
1 x tomato wedges optional

Directions

1. Combine all ingredients except greens and tomato wedges; season to taste and chill.

2. Serve on salad greens; garnish with tomato wedges if desired.

Baked Chicken with Provolone & Ziti
