95 minFive ingredients and a bundt pan. That’s all it takes for this apple swirl cake that stays remarkably moist thanks to a full 15 ounces of applesauce standing in for oil and butter in the batter.
The swirl comes from a simple cinnamon-sugar mixture layered between two pours of batter. As the cake bakes, that ribbon of spiced sugar melts into a gooey streak running through the center. It’s the kind of surprise that makes every slice look a little different.
Applesauce does more than add moisture here. It brings a natural sweetness and subtle fruit flavor that pairs with the cinnamon in a way that plain oil never could. The crumb stays tender and dense without being heavy.
Kitchen Tips
- Beat the batter at high speed for a full two minutes after the ingredients are moistened. This builds structure since applesauce cakes don’t have butter or oil to tenderize the crumb the same way.
- Cool the cake upright in the pan for 25 minutes before inverting. Turn it out too early and it falls apart; too late and it sticks.
- Test with a toothpick at the 40-minute mark. Ovens vary, and the applesauce can make it tricky to judge doneness by appearance alone.
- Dust with powdered sugar for simplicity, or drizzle with a cream cheese frosting if you want something richer.
Variations
- Spiced version: Add ¼ teaspoon each of nutmeg and ground cloves to the cinnamon-sugar swirl for a warm, autumnal flavor.
- Caramel drizzle: Skip powdered sugar and pour warm caramel sauce over the top for a sticky, indulgent finish.
- Chunky apple: Fold ½ cup of diced fresh apples into the batter for more pronounced apple flavor and texture.
