Ingredients

9 each egg whites
9 each egg yolks
1/2 cup sugar
9 tablespoons matzo meal
9 tablespoons potato starch
1 each lemon juiced and rind, grated
apple mixture
6 each apples grated
1/2 cup sugar
1 tablespoon lemon juice
1 1/2 teaspoons cinnamon

Directions

In bowl, beat until stiff, 9 egg whites, set aside.

In a bowl, beat until thick and light, 9 egg yolks and 1/2 cup sugar.

Stir in 9 tbls.matzo meal, 9 tbls. potato starch and the juice and rind of 1 lemon.

Fold in 9 egg whites.

Pour 1/2 the batter into ungreased 9 inch x 13 inch baking pan.

Bake at 325F for 25 minutes.

Remove from oven and spread with apple mixture.

In a bowl combine 6 apples, grated; 1/2 cup sugar; 1 tbls.

lemon juice and 1 1/2 ts.cinnamon.

Spread remaining batter over apples.

Bake 20 to25 minutes longer, until brown.
