Three-ingredient no-mix meatloaf wrapped in foil that makes its own mushroom gravy as it bakes. Ground beef, onion soup mix, and cream of mushroom soup do all the work.

Three ingredients. No mixing bowl. This no-fuss meatloaf is about as hands-off as dinner gets. Shape the ground beef into a loaf on a sheet of foil, sprinkle onion soup mix on top for seasoning, spread cream of mushroom soup over the whole thing, and wrap it up.

The foil seal is where the magic happens. As the beef cooks, the juices combine with the mushroom soup and onion soup mix to create a thick, savory gravy right inside the packet. No separate gravy-making required.

Keep the foil sealed loosely enough for steam to circulate but tight enough at the edges that nothing leaks. The trapped steam bastes the meatloaf from all sides, keeping it moist even without egg, bread crumbs, or any of the usual binders.

After an hour and twenty minutes, you unwrap a tender loaf sitting in its own rich gravy. Spoon the pan sauce over sliced portions.

Pro Tips

  • Form the loaf about 3 inches high so it cooks evenly. A flat loaf overcooks and dries out; too tall and the center stays raw.
  • Use lean ground beef to keep the gravy from being greasy. The soup mix and mushroom soup add plenty of richness on their own.
  • Place the foil packet on a baking sheet to catch any leaks. Melted foil seals can open during cooking.
  • Let the meatloaf rest 5 minutes in the foil after removing from the oven. The juices redistribute and the gravy thickens slightly.

Variations

  • Cheesy meatloaf: Tuck shredded cheddar into the center of the loaf before wrapping.
  • BBQ style: Replace the mushroom soup with BBQ sauce for a tangy, smoky glaze.
  • Turkey version: Use ground turkey instead of beef for a lighter take.

Directions

Form ground beef into loaf about 3 inches high on a large sheet of aluminum foil.

Sprinkle soup mix on top.

Spread soup from can over the top.

Wrap foil loosely but seal tight.

Place on a baking sheet or in a shallow pan.

Bake at 350℉ (180℃) for 1 hr. and 20 minutes.
