100 minMud pies are the no-bake cookie that every kid learns to make first and every adult keeps making forever. A quick boil of margarine, sugar, cocoa, and milk creates a hot fudge base, then chunky peanut butter, quick oats, and vanilla get stirred in off the heat.
The one-minute boil is the only timing that matters in this entire recipe. Boil too briefly and the cookies won’t set up firm. Boil too long and they’ll turn dry and crumbly instead of fudgy. Set a timer and watch the clock.
Chunky peanut butter adds bits of nut throughout each cookie, giving them more texture than the smooth version would. Every bite has a mix of chewy oats, fudgy chocolate, and little peanut crunches.
Kitchen Tips
- Bring the mixture to a full rolling boil, not just a simmer. You need that high heat to activate the sugar properly
- Stir in the peanut butter and oats quickly while the base is still hot or it won’t mix evenly
- Drop them fast. The mixture stiffens as it cools, and the last few will be harder to spoon
- If they won’t firm up after an hour, the boil wasn’t long enough. Pop them in the fridge to help
Variations
- Use creamy peanut butter for a smoother texture
- Swap peanut butter for almond butter or sunflower seed butter for a nut-free version
- Stir in shredded coconut or mini marshmallows with the oats for extra flavor
