One skillet, 20 minutes, and a plate loaded with crispy hash browns, salty ham, fluffy scrambled eggs, and melted cheddar. This is the kind of breakfast that fuels a whole morning.

Frozen hash browns, diced ham, and chopped onion get sautéed together for 10 minutes until the potatoes are golden and tender. The ham crisps slightly at the edges, and the onions soften and sweeten. Then beaten eggs go right into the same pan, stirred gently until just set.

The cheddar gets folded in off the heat so it melts from the residual warmth without turning rubbery. A sprinkle of fresh chives on top adds color and a mild oniony bite. That’s it. No complicated techniques, no special equipment.

Directions

In a large skillet, sauté potatoes, ham and onion in oil for 10 minutes or until potatoes are tender.

In a small bowl, beat eggs, salt and pepper.

Add to the skillet; cook, stirring occasionally, until eggs are set.

Remove from the heat and gently stir in cheese.

Spoon onto a serving platter; sprinkle with chives.
