Ingredients

Basic muffin mix
5 1/2cups flour, all-purpose
2 1/4cups whole wheat flour
2 1/2cups bran natural
1 3/4cups milk skim powder
1 1/2cups sugar granulated
2tablespoons baking powder
2teaspoons salt
Healthy start muffin
1cup all-bran cereal
1 1/4cups water
1/3cup molasses
1each egg
1teaspoon vanilla extract
2 3/4cups other recipe basic muffin mix
3/4cup prunes chopped
1/3cup pumpkin seeds green
2teaspoons cinnamon
1/2teaspoon baking soda

Directions

Best: Basic Muffin Mix: In large bowl, stir together all-purpose and whole wheat flours, bran, milk powder, sugar, baking powder and salt until combined.

[for storage: transfer to airtight container; store in cool, dry place. Stir well before using.]

Healthy Start Muffin In bowl, soak cereal in water for 5 minutes or until softened; whisk in oil, molasses, egg and vanilla.

In large bowl, stir together Best: Basic Muffin Mix, prunes, pumpkin seeds, cinnamon and baking soda; stir in cereal mixture just until moistened.

Spoon into greased muffin cups, filling to top.

Bake in 375F 190C oven for about 30 minutes or until tops are firm to the touch.

Let cool in pan on rack for 5 minutes; remove muffins to rack and let cool completely.
