The onion prep is a small detail that makes a big difference. Rinsing the minced white onion and soaking it in ice water for 30 minutes tames its raw sharpness. Directions

Cut fish into 6 equal portions and heat.

Arrange papaya relish and hot fish equally on 6 warm plates.

Garnish plates with cilantro.
