Grilled Fish with Pineapple-Cilantro Sauce

Ingredients

1 medium pineapple peeled, cored, cut into 1" chunks
3/4 cup pineapple juice unsweetened
2 tablespoons lime juice
2 cloves garlic minced
1/2-1 teaspoons jalapeno pepper
2 tablespoons cilantro minced
1 tablespoon cornstarch
2 tablespoons water cold
2-3 tablespoons sugar substitute
1 x salt
1 x black pepper
6 each halibut haddock or salmon steaks or fillets, grilled

Directions

Heat pineapple, juices, garlic and jalapeno pepper to boiling in a medium saucepan; reduce heat and simmer, uncovered about 5 minutes.

Stir in cilantro; heat to boiling.

Mix cornstarch and cold water, stir into boiling mixture.

Boil, stiring constantly, until thickened.

Remove from heat; cool 2-3 minutes.

Stir in nutrasweet, season to taste with salt and pepper.

Serve warm over fish or pork.
